Why the turtles only? You could but the beginner coding gui on the computers.

At a guess, probably because turtles can interact with the world and so most beginners would want to jump into something that they can see works more than just seeing a text output.

The Turtles are the best argument for ComputerCraft as an educational tool: By using turtles to automate tasks, students can learn how programming is used to automate repetitive tasks and solve real problems, something most beginner programming environments fail to offer.
